I broke my old knife that I used for fruit cutting for our morning smoothies. The Fissman 6" boning knife looked similar to what I liked to use.It is perfect for my use. I found that it cut off the skin from a mango after cutting the mango sides off of the large seed, easily. It is like skinning a fish side. It took off the rind from orange segments easily and cut up the rest of the fruit as I have always done.I did find one minor problem. It is a fairly good mat BUT it is thin. Actually had no smell on mine and arrived folded but I was able to get the fold to lay flat. My only problem is I was wrapping presents on my table and didn't move the mat and then I use a rotary cutter which was a big mistake as it cut the mat. As I make custom silicone molds, I simply applied a thin layer over the cuts to repair the mat but again : it is thin so the cutter went right through it with almost no pressure.
